4mdCucumbers
2mdOnions, finely chopped
1 Clove garlic, minced
2tsSalt
8 Salad potatoes DRESSING:
1/4cSalad oil
2tbVinegar
1/4tsPepper Add more salt, if needed

Wash, peel and slice cucumbers thin. Add onions, garlic and sprinkle with salt; let stand 1 hour. Then squeeze the liquid from the cucumber mixture. Boil potatoes, peel and slice when cool. Add to cucumber. Toss lightly with dressing. Mix lightly and toss with potatoes and cucumbers.
